Easy Pumpkin Pudding
It’s officially my favorite season of the year, and in addition to cooler weather and falling leaves, it’s also time to make some of my very favorite pumpkin treats!
I was never much of a pumpkin pudding fan, but that’s because I only ever had the store-bought stuff you buy in a box. (ew.) This homemade pumpkin pudding is a delicious dessert or decadent snack.
Not only is it so simple to put together, (just toss some ingredients in a bowl and then chill in the fridge!) but it is also inexpensive, so you can feed a crowd for pennies and still have everyone rave about your awesome cooking skills!
Ingredients You’ll Need
- Instant Vanilla Pudding*
- canned pumpkin
- pumpkin pie spice
- milk
- brown sugar
- whipped topping, optional
*Ingredient Tip – You can use Cook and Serve Vanilla Pudding, but you’ll need to make it on the stovetop and cook according to package directions BEFORE adding the other ingredients. The Instant Vanilla Pudding doesn’t need any prep.
How To Make Pumpkin Pudding
Combine – Start by mixing together the instant pudding, pumpkin, spice, milk and brown sugar into a bowl until everything has fully combined.
Fill – Divide the pudding mixture evenly into your serving cups. I was able to split this recipe into 8 smaller serving cups.
Chill – Place the pudding in the refrigerator for about one hour to let it set and cool. Like revenge, pudding is a dish that’s best served cold.
Serve – You can serve them as-is but I like to top the pudding cups with a little whipped cream and sprinkle some pumpkin pie spice over the top.

Easy Pumpkin Pudding Recipe
Ingredients
- 6.8 oz Instant Vanilla Pudding mix, (2 boxes)
- 15 oz pumpkin puree
- 2 tsp. pumpkin pie spice, plus more for garnish
- 3 cups whole milk
- 1/4 cup brown sugar
- whipped topping, optional
Instructions
- In a large bowl, mix together the pudding mix, canned pumpkin, milk, pumpkin spice, and brown sugar.
- Spoon the mixture into individual serving cups, then chill in the refrigerator for one hour.
- Top with whipped cream and a pinch of pumpkin pie spice. Serve immediately.
