Rolo cookies are quite possibly the EASIEST treats you’ll ever make!! They are made with only two ingredients and take about 15 minutes of your time from start to finish!
Homemade cookies are my love language. And I am all about keeping things simple around here, which is why I love cookies that taste homemade, without all the fuss and chill times. Cake Mix Cookies, 10-Minute Sugar Cookies, and these Chocolate Chip Rolo Cookie Bites are some of my very favorites!
Rolo Cookie Bites
As much as I am ok with baking cookies from store-bought dough, there is nothing like a homemade chocolate chip cookie – wouldn’t you agree? They seem to be fluffier, chewier, and have an overall better taste than the premade stuff you can buy at the grocery store.
Every once in a while you discover a way to make that store-bought dough into something amazing, and THIS Rolo Cookie recipe does just that. These Rolo Cookie Bites take store-bought chocolate chip cookie dough and kick them up a notch, simply by adding a rolo candy to the center while they bake. The result is something that tastes more homemade – chewier, fluffier… they are amazing!
Here’s how to make them –
- refrigerated cookie dough
- Rolo's candies unwrapped
- mini muffin pan
Preheat oven to 350 degrees.
Take about a teaspoon of cookie dough and press it in the mini muffin pan.
Gently press a Rolo on top.
Place the pan in the oven for 12 minutes.
Let cool completely.
I used a knife to loosen the edges of the cookies and they pop right out!!
