Once in a while, you discover a way to make that store-bought dough into something amazing, and this Rolo Cookie recipe does just that.
They’re made with store-bought chocolate chip cookie dough with a rolo stuffed in the middle. When they bake, the chocolate melts and the caramel center becomes ooey, gooey, and chewy!

How To Make Rolo Cookie Bites
Step 1: First, preheat your oven to 350 degrees F. Like I mentioned before, I like to use store-bought cookie dough to make this easier. If you prefer homemade dough, then go ahead and whip that up. If you need a recommendation, here’s a great recipe.
Step 2: Take about a tablespoon of cookie dough and place it in each of the cups of the mini muffin pan. Gently press a piece of unwrapped Rolo candy into the top of each piece of dough.
Step 3: Cook the Rolo cookie bites in the oven for about 12 minutes. Let the cookie bites cool to room temperature before removing them from the pan. Serve and enjoy!
Tips & Variations
- For easy removal, run your knife around the edges of the cookie bites and they should pop right out.
- Regular or mini rolos will both work. If you find you need to make larger cookie dough balls in each cup, go ahead and use more.
- Swap the rolos for another chocolaty filling. Hershey’s kisses or Reese’s peanut butter cups are always fun options.
- Use a different kind of cookie dough. Chewy chocolate cookies would be just as delicious!

Ingredients
- 2 cups refrigerated cookie dough, (1 1/2 – 2 cups, approximately)
- 24 Rolos candies, unwrapped
Instructions
- Preheat oven to 350 degrees.
