Easy Banana Muffin Recipe
Grab those overly ripe bananas on your counter and get ready for a recipe that you’ll want to make over and over and over!
This banana crumb muffin recipe has become a family favorite! I bake a batch every couple of weeks and they are eaten in 2 days or less! My kids eat them before school with a glass of milk, and they eat them when they get home for an afternoon snack.
A couple of weeks ago I heard my teenage son tell his brother not to eat the bananas I bought at the store so we could make these muffins again when the bananas turned brown – they love them so much!
They’re so simple to make – here’s how:
How to Make Banana Crumb Muffins
INGREDIENTS –
- DRY INGREDIENTS – flour, baking powder, baking soda, salt, sugar, and cinnamon
- WET INGREDIENTS – bananas, egg, butter, vanilla extract, yogurt, or sour cream
- CRUMB TOPPINGS – brown sugar, flour, butter, cinnamon
DIRECTIONS –
PREP – Preheat the oven to 375. Grease or line a muffin tin with muffin liners.
DRY INGREDIENTS – In a large bowl, mix together the flour, baking powder, baking soda, salt, sugar, and cinnamon in a large bowl. Set aside.
WET INGREDIENTS – In a separate bowl, mash the bananas, then add the egg, butter, vanilla, and yogurt (or sour cream) to the banana bowl.
MIX – Add the banana mixture to the dry ingredients and mix well.
SPOON – Spoon batter into the muffin pan, using about 1/3 cup of batter for each of the 12 muffin cups.
CRUMB TOPPING – Combine the topping ingredients in a small bowl, then sprinkle over the batter.
BAKE – Bake for 15-20 minutes, or until a toothpick comes out clean.

for the muffins:
- 1 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup sugar
- 1 tsp cinnamon
- 3 bananas, mashed (about 1 1/2 cups mashed bananas)
- 1 egg
- 5 1/2 tbsp melted butter
- 1 tsp vanilla
- 1/4 cup yogurt or sour cream
for the crumb topping:
- 1/2 cup brown sugar
- 1/4 c flour
- 2 1/2 tbsp butter
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 375. Grease or line a muffin tin.
- In a large bowl, mix together the flour, baking powder, baking soda, salt, sugar, and cinnamon in a large bowl. Set aside.

Really great taste – this recipe makes at least 18 muffins. A dozen muffins overflowed in the pan. Topping is really good.
