There’s no waiting for your batter to rest, there aren’t any picky ingredients that you need to be careful with – just dump, stir, and bake! They’re so easy, you won’t believe you made them from scratch. Plus, these muffins come out soft, moist and fluffy every time!

This recipe only uses thee few basic ingredients that you probably already have in your pantry.
- Margarine
- Sugar
- Eggs
- Honey
- Salt
- Flour
- Cornmeal
- Baking Powder
- Milk
- Corn
How To Make Cornbread Muffins From Scratch
Prep – Start by preheating the oven to 400 degrees F. You’ll also want to either grease your muffin tin or use cupcake liners. I’m all about presentation, so I love using cute cupcake liners.
Step 1 – Start by creaming the butter, sugar, eggs, honey and salt together in a bowl until it’s fully mixed.
Step 2 – Next, add in the flour, baking powder and cornmeal and give it a good mix. Slowly stir in the milk and mix until everything has blended together.
Step 3 – Stir in the corn until it’s evenly distributed throughout the batter.
Bake – Fill the muffin tins with batter and then bake for about 20-25 minutes. When the muffins are fully cooked they should be a light brown color on top.
Serve – Let them cool and then enjoy! They taste great as is but I like to top them with a little Honey Butter as well.

- In a large bowl, cream together butter, sugar, honey, eggs, and salt until well combined.

- Add corn to the bowl and mix until combined.
- Fill each muffin cup all the way to the top with batter and bake for 20-25 minutes or until muffins are cooked through.
