Peppermint Marshmallow Pops are a delicious treat the entire family can make and enjoy! With caramel, chocolate, and crushed peppermint candies, this easy recipe is perfect for the holidays!

Going to Disneyland any time of year is always amazing, but going to Disneyland at Christmastime is pure MAGIC! There’s nothing like the Christmas decorations, the cast holiday costumes, and the delicious wintry treats that are served on every corner of the park.
The delicious marshmallow pops were inspired by our visit to Marceline’s Confectionery in Downtown Disney. I’m not usually a “marshmallow on a stick” kind of girl, but when you dip it in caramel AND chocolate, you’ve got my attention!
You can roll these chocolate-covered bites of heaven in whatever candies, sprinkles, or nuts you and the kids like. In keeping with the holiday theme, we made ours with crushed peppermints. (And they are amazing!)
Here’s how to make them –
How to Make Peppermint Marshmallow Pops
The ingredients for these marshmallow pops can be kept in your pantry and ready to use when you need them!
INGREDIENTS –
- bowl of water
- large marshmallows
- lollipop sticks
- caramel topping – I used a jar of caramel topping that you’d use for a sundae
- melting chocolate – I used Wilton’s melting wafers in milk chocolate, but you can use whatever flavor candy melts you prefer!
- crushed peppermints – you can use candy canes or peppermint discs. Place the candies in a Ziploc bag, then crush them with a meat tenderizer or rolling pin.
VARIATIONS –
Feel free to use the topping of your choice in place of the peppermints. Some of our favorites are
- M&Ms
- crushed Heath bars
- festive sprinkles
- crushed peanuts
- shredded coconut
- graham cracker crumbs
INSTRUCTIONS –
Dip one end of each lollipop stick in 1 inch of water. Skewer 1 marshmallow onto each stick, starting at the wet end. Repeat so there are 3 total marshmallows on each stick, dipping the end of the stick in water before adding the next marshmallow so they slide on easily.
Dip marshmallows into caramel, gently tapping to remove excess caramel, and place on a cookie sheet lined with parchment paper. Cool caramel at room temperature for 30 minutes.
Melt chocolate in the microwave according to package directions. Keep warm.
Place crushed peppermint in a shallow dish.
Dip caramel-coated marshmallows into melted chocolate, gently tapping to remove excess chocolate, then gently roll marshmallow pop in crushed peppermint and place on a clean sheet of parchment paper. Repeat for all wands.
Cool at room temperature for 15 minutes, until chocolate is set.
Serve and eat immediately, or store in an airtight container for up to 1 week.
