If you’ve never made Cucumber Sandwiches, you’re in for a special treat! Thinly sliced Cucumbers laid over cream cheese and fresh herbs, sandwiched between soft, crustless bread. They’re simple, refreshing, and can be served as a light lunch or tasty appetizer at a party! Here’s how to make them –
Ingredients You Need
Cucumber Sandwiches could not be any easier to make. Start by grabbing all your ingredients.
- Cucumber
- Cream cheese
- Mayonnaise
- Fresh dill
- Fresh chives
- Garlic powder
- Salt & pepper
- Sliced bread
How to Make Cucumber Sandwiches
Blend – To start, you’ll want to mix the cream cheese and mayonnaise together. I use my electric hand mixer to get everything nice and smooth, but you can definitely use a spoon or fork for this.
Substitute Idea – Are you not a fan of mayonnaise? Add some homemade ranch dressing mix to your cream cheese instead of the mayo and herbs!
Fold – Next, you’ll want to gently fold in some fresh herbs. I love using fresh dill and fresh chives, but you can add whatever fresh or dried herbs you’d like!
Tip – For a quick alternative, try using flavored cream cheese instead of all the fresh herbs and mayo.
Compile – Spread the cream cheese mixture over each slice of bread, then top one side with thinly sliced cucumbers and one side with additional herbs, if desired.
Cut – Place both slices of bread together to make a sandwich, then cut off the crusts and slice into squares so they are perfect finger sandwiches.

Best Cucumbers – You can use whatever cucumbers you’d like for these sandwiches. My favorite are English cucumbers because you can leave the peel on for some added color. If you use other cucumbers, you might want to peel them first as their peels are tough and might be bitter.
Best Bread – Cucumber sandwiches are traditionally served on white bread with the crusts removed, but you can use any bread you’d like!
Make Ahead – This recipe can be made up to 24 hours in advance if stored in an air-tight container in the refrigerator. Be sure each slice of bread is completely covered/sealed with the cream cheese spread – otherwise the bread will get soggy.
